
There is nothing like those Sam’s Club rotisserie chickens! There are so many great usages you can get from them. They are affordable and just so delicious. My husband and I go every Sunday to get one and we have to race after church since they fly off the shelves! It is a sad sad day when we get there and they aren’t there. We walk out the store slowly, empty handed feeling lost lol! Luckily this has only happened a couple of times! We just can’t get enough! I want to share with you 3 ways we break down just one whole chicken to get 3 meals from it!
1. Chicken Breasts with 2 easy sides
The first thing I do when I prepare the chicken is cut off ONE of the breast with the tenderloin meat for Joshua! I also remove both drumsticks and one thigh, for me! This makes for a very quick dinner on nights where we get home from work and have 1 hour before we head out to midweek service. I cut the breast meat up and serve them with any vegetables that we have on hand and a side of noodles.
Sauteed Broccoli
How I Make it: You will need broccoli, butter, oil, and seasonings of choice
Heat a skillet with 2 tablespoons of butter and oil. Grab a head of broccoli and clean it very well. Cut the celery off into your desired sizes and place them into the hot skillet. I cook the broccoli for about 5-6 minutes giving them a chance to soak up the butter and oil. Next I add a nice splash of water adn immediately place a lid on top of the broccoli. This will help the broccoli get nice and soft. Cook for about 10 minutes with the lid on. Check periodically to make sure the broccoli doesn’t start to burn. Once the broccoli is as tender as you’d like, take the lid off an season! We use garlic powder, garlic powder, salt, and pepper! That is all you need. Feel free to add another tablespoon of butter and turn up the heat to get the broccoli to have a chard, crispy finish! It is delicious! You will have everyone singing your praises!
Black Pepper Parmesan Noodles
How I Make it: You will need noodles, butter, freshly grated parmesan cheese, 1 lemon, salt, and fresh cracked pepper
Fill up a medium pot with water, about 3/4ths full, and place it on the stove on medium/high heat. Once the water starts to boil add a little salt along with your noodles of choice. We use angel hair pasta! Cook the pasta until it is al dente. Grab some of the pasta water with a mug and strain the rest. Put the pot of cooked noodles back on the stove on low medium. Add the butter and stir until all the noodles are fully coated. Add half of the parmesan and stir letting the heat melt it slowly so that it starts to make a bit of a sauce. If your noodles are a bit dry, add a splash of the pasta water that you saved. Add the rest of the cheese and stir. It should look a bit like a runnier alfredo sauce, pale in color and creamy. Add cracked black pepper, lemon juice, and salt to your liking. I use about 1 tsp pepper, a pinch salt (the cheese is already salty), and 1 whole lemon in mine! Serve piping hot! It is delicious!

2. Chicken Salad Sandwiches
I shred the remaining breast and thigh meat to make the perfect chicken salad sandwich! Here is how I make it!
You will need:
- 2 1/2 cups of remaining chicken meat
- 3/4 cup mayo of choice, add more to your liking
- 2 T Dijon mustard
- juice from 1 lemon
- 1 sweet onion, minced
- 1/2 of an apple of your choice, very small dice
- 3 celery stalks, small dice
- 1 T of fresh dill
- salt and pepper to your liking
I use my standing mixer to mix all of the ingredients but if you have a bowl and a large spoon that works just fine! Add all the ingredients to the bowl and mix until creamy! Take a taste test! At this point I usually have to add a little more mustard, lemon, juice, or salt.
Serve on brioche bread and OMG! You have lunch for the next week!

3. Chicken Stock
Now all we have is the chicken carcass that is filled with FLAVOR! If you were here when I first started the blog, you would know that I love having chicken stock ready in the freezer! They are perfect for soups, hot drinks for when you are sick, and additions to roasts and dinner recipes! There are so many benefits like improving your immune system, rich in collagen, helps with sore throat, high in minerals, and nutrients, the list goes on!

This recipe used a stock pot to make the stock but last week I experimented with the insta pot and it was just as delicious. Place all the ingredients in the insta pot and fill water to the maximum line that can be seen on the side of the bowl. Close and secure the lid and pressure cook for 55 minutes. Once finished let all the air release for at least 30 minutes and strain to use right away or freeze for later!
